When he removed the Chinuri from the skins the qvevri was not completely full. In order to make it full he used the skins of Chkhaveri. This resulted in a coppery colored wine with deep aromas. The Chkhaveri (a Gris variety) imparts a spicy woodsiness to the grapes typical citrus and blossom aromas.
