Its inherently neutral character allows the face of the land to dominate. David’s is a wine of similar function to French Muscadet. Saline, more mineral than fruit but with a lemony spine and low strength that lends this landlocked wine to seafood (we try to avoid landlocked wine with seafood unless it is completely necessary, as it is here). It is the least exciting of David’s wines and we love it for that. Unadorned, uninterpreted it is simply what it is and perfect for it.
